I have this problem....... I surf the internet..... read food blogs, and get HUNGRY and have cravings. I found this recipe on Saturday and decided that I HAD to make...... immediately.......! Dulce de Leche sandwich cookies. It did end up taking two days, but it was fun and is yummy. The original recipe called for cutting these into circles and edging them with toasted coconut. My mind went straight to Valentine's Day, heart shapes with pink sugar around the edge. It is a delicious shortbread, made with cream cheese, then caramel (I actually made this by simmering sweetened condensed milk for three hours..... in its own can!)sandwiched in between, and glazed with bittersweet chocolate. I am sending these through the internet to Becky, whom I know LOVES caramel as much as I. Wish you could fax food!!!! The rest of them are going to the kids, teachers, some of the people I work with........ and the rest will be enjoyed by my special Valentine's at home.

Pajama Day

Owen's preschool class was learning about the letter "P" this last week. Friday was PAJAMA DAY. Owen could not decide which pajama's to wear so he wore his Lighting McQueen pajamas under his footie pajamas. I had already signed up to volunteer that day, so Raisa came in her pajamas with me too. AND, Scott had the day off so he came too! The kids were soooo excited, and had a blast. They made Personal Pan Pizzas with Pepperoni, had popcorn, read a book about pirates and wore pajamas. I definitely picked the fun day to volunteer in the classroom.
